Our mezcal is a blend of 8 year old agave Espadín and 14 year old wild agave Cirial. The range of flavors is impressive with diverse fruit, herbal, wood, citrus and earth connotations, slightly smoked, very balanced between the flavor of the agaves and the aromas of the process.
The harvested plants are cooked on a conical rock pit (oven) underneath the ground, with Encino wood fire and pre selected river stones. Fermented with natural yeast. Double distillation in cooper pits.
