Each season of single barrels released by Stellum is represented by a constellation. Perseus is the latest of these releases offering a mash bill of 75% Corn, 21% Rye, and 4% Barley Malt. If you're familiar with Greek mythology, you might be aware that Perseus was the one that slayed Medusa, and true to its name, at 115.18-proof, this selection also slays. The nose is a beautiful blend of maple and oak, with a touch of candied pecans. On the palate, you'll discover a blend of dark chocolate, graham crackers, a hint of grass, and mint. And the finish rounds out the experience with oak, dark fruits, and caramel with a peppery warmth that leaves your mouth watering while waiting for another sip. To dive even deeper into the world of puns, this bourbon shines like the stars making their frame in the Northern sky. Every barrel season released by Stellum is represented by a constellation. Leo is one of four releases that boast a mash bill of 75% Corn, 21% Rye, and 4% Barley Malt. Aside from being an incredibly powerful pour at 120.5-proof, it is wonderfully distinct from our Perseus selection. When you pour this bourbon into your glass, you'll discover notes of cherry, cinnamon, and sugar cookies. On the palate, you'll find stone fruits balanced with the evolving flavors of a s'more, from milk chocolate to graham cracker to toasted marshmallow. This evolves into a finish of honey, walnuts, and toasted oak with a perfectly set warmth that calls you back for the next sip.
