The Night Sweats Straight Bourbon made by The Block Distilling Co. is double distilled, made from majority corn, and aged in American white oak barrels. Not unusual so far. However, we started The Block to see what kinds of flavors we could create and boundaries we could push. For this two year aged bourbon that means using three different corns, yellow, blue, and red. The blue corn adds a delicious sweet corn tortilla note and the red results in a wonderful peppercorn addition. Many bourbon's will be made with the addition of wheat or rye to add depth to the corn's sweetness. In this case we work with millet, an ancient grain, to add a welcomed earthy note. That oak barrel the bourbon ages in also stands apart. The oak used by the cooper to make this cask is allowed to rest for three times longer than the standard whiskey barrel. That extra time spent in the "seasoning" stage breaks down the green, grassy, astringent notes. Why is that important? The barrel is a massive flavor creator in the final spirit so making sure that the wood only has good flavor to give means better whiskey with more complexity and a smoother finish. Did we mention it sits in these full size 53 gallon casks for two years!
