Penelope Bourbon Toasted Series explores new and unique expressions of their signature four-grain straight bourbon whiskey. After full maturation in charred new American oak barrels, they finish Penelope Bourbon in a new, freshly toasted barrel. Each batch is a unique blend of their signature three bourbon mash bills, and all have different custom chars & toasts – making each bottle unique and different.
Brian Schmidt, Topflight Panel Member:
Every once in a while, you find a whiskey that simply coats your mouth and lingers. This barrel strength toasted barrel pour from Penelope lasts for days. I'll probably still be sensing it a week after writing these tasting notes, so it's a good thing it's delicious. A full oak is expected on the palate, but it's met by a wonderful sweetness reminiscent of grilled peach and burnt sugar. Next is the aroma; the nose is really nice and familiar. I found it developed the longer it sat in the glass, and with just a couple of drops of water jumped out of the glass with a soft, stone fruit sweetness. If you're unfamiliar with Penelope, they won Best in Class for Small Batch Bourbon (up to 5YO) at the San Francisco World Spirits Competition this year and are creating some unique whiskey. This toasted barrel finish is not to be missed.
