Ikikko begins as shochu produced in accordance with the Iki Shochu G.I. which stipulates a mash bill of two-thirds barley and one-third koji rice. The use of koji rice imparts a unique umami throughline and the aging in Oloroso sherry casks doubles down with additional layers of dried fruit and nuts.

Ripened dark fruits, white pepper, and aged allspice mix harmoniously with subtle citrus & morning dew.
Wood fiber soaked with light cardamom, delicate cream, and tangerine is followed by a rising crescendo of clean spices with a lingering touch of herbal tea and steamed rice.
Distant sea salts arrive with a balanced amount of dried wine as the oily peppermint and candied sweetness allow for a clarified and complex lasting experience.
