Once the whiskeys were blended, they were finished in a char #1 used oak.

This HIRSCH Single Barrel Double Oak Bourbon is an intriguing and truly satisfying pour that takes you on a bourbon journey by celebrating the impact of two distinct mash bills in one final barrel. True to their focus on transparency, the back of this HIRSCH bottle has a label that shares a make-up of two bourbons added in a 90% / 10% combination to be finished together in the second (and final) oak barrel. The 90% is a rich, flavorful 8-year, 7-month bourbon with a mash bill of 72% corn, 13% rye, and 15% malted barley. The 10% is a bright, bold 3-year, 7-month bourbon with a 74% - 18% - 8% mash bill. The result is astounding when blended and finished in a new oak barrel. The nose greets you with maple and subtle grains like fresh pancakes with warm maple syrup, candied cherries, and oak. The flavors immediately punch up the bright berries and cotton candy, drawing down into chocolate, cloves, and vanilla. The finish is rich butterscotch sweetness that quickly evolves into a hint of rye spice and oak tannins.
