This fresh, rose-petal gin was first made to honour our head distiller's mum, Rose, at his little brother's wedding. Rose had recently passed away, and this was his way to have her there in spirit - literally. Carefully-tended flowers, from her rose garden are slowly vapor distilled with wild roses and plants from the mountains around the distillery to make this an intensely floral gin.

After distilling, the gin is then further infused with even more roses to deepen the flavors and give it its lovely pink hue. This is not "just another pink gin", far from it. The depth and complexity really needs to be tasted to be understood. Floral, fragrant and flavorful, it is some of the best, most interesting gin we've made and comes after a lot of experimenting with plants, fruit, spices and flowers.

Origins

The Glendalough Distillery was set up by five friends from Wicklow and Dublin who shared a love of craft spirits. They eventually decided to leave the safety of their day jobs in Dublin and went into the mountains to take a chance on something more meaningful (much like the man on their bottle, St Kevin). Together they built a craft distillery near their favorite spot in those mountains where they produce Whiskey, Gin and Poitín. Glendalough (meaning The Valley of Two Lakes) is a glacial valley nestled in the Wicklow Mountains renowned for its early medieval monastic settlement founded in the 6th century by St. Kevin, the legendary monk. Monasteries like Glendalough were the birthplace of distilled drinks and St. Kevin is an eternal inspiration for the Glendalough team. From the picturesque mountains, forests and fields surrounding the distillery, the Glendalough team forages fresh botanicals daily to encapsulate the taste of the valley in every bottle of gin produced. The use of Irish oak (just like the early settlement would have done) sustainably felled in forests surrounding the distillery has inspired some unique whiskey expressions to also bring further flavors of Glendalough from their neck of the woods, to yours.

Rose Gin Spritz

Ingredients

2 oz. Rose Gin
1 oz. Fresh lime juice
Add Grapefruit soda
1 Grapefruit wheel
Add Sprig of mint

Recipe

  1. Pour the Rose Gin into an ice-filled glass and add the fresh lime juice.
  2. Top off with a grapefruit soda.
  3. Garnish with a grapefruit wheel and freshly torn and slapped sprig of mint.
