Intercept’s Head Winemaker Amanda Gorter is a native of California’s Central Valley and a graduate from UC Davis. Together, Amanda and Charles collaborate on each vintage to complement Charles’ distinct preferences while delivering wines that are bold, expressive, and authentic to the places they are from.
Charles Woodson's Intercept Cabernet Sauvignon
The intense dark ruby red color of our Cabernet Sauvignon is reflective of this full-bodied, flavorful wine.The core of black currant and hints of cedar and spice along with cocoa aromas echoed by rich persistent flavors of plush ripe fruit, dark chocolate, and anise are all supported by balanced rich velvety tannins.
PAIRING: Pair with anything off the BBQ, steaks, braised short ribs, and lamb chops.
VARIETAL TYPE: Cabernet Sauvignon.
WINEMAKING:When making Intercept Cabernet Sauvignon we target vineyards sites with well-draining soils and good exposure. This helps us create a juicy, full-bodied wine. We age our Cabernet Sauvignon in French and Eastern European Oak for 18 months.
APPELLATIONS: Paso Robles, California.
RATINGS: 2021 Critics Challenge, 92 points, Gold.
Charles Woodson's Intercept Chardonnay
2019 Intercept Chardonnay is medium-bodied with notes of spiced apples, citrus, and biscuit. Rich from barrel fermentation and sur lie aging, the wine has bright acidity with a lingering toasty oak finish.
PAIRING: Pairs well with seafood (salmon, crab, octopus), roasted chicken, and fresh summer salads.
VARIETAL TYPE: Chardonnay (single vineyard).
WINEMAKING: When making Intercept Chardonnay we target bright acidity with a rich mid-palate created by the extended sur lie aging. Made from a single vineyard, our Chardonnay was brought in in the early morning hours and gently pressed. The juice fermented in barrels (a blend of French and Eastern European, 25% new) and stainless steel. The wine underwent malolactic fermentation and aged sur lie for 6 months.
APPELLATIONS: Monterey, California . (100% Arroyo Secco, single vineyard).
RATINGS: San Francisco International Wine Competition, Silver Medal.
