Using local grains, a distillation process that includes a 1,320-gallon handmade pot still and a 16-plate bubble-cap "Superaromator," topped off with an aging process that sees extreme summer highs and snowy lows, the end results is a solid pour from the first to last drop. Ours is a 114.4-proof single barrel selection with a nose of cherry, brown sugar, and a hint of toasted malt. The palate hints of caramel, baking spices, vanilla cake, and dark chocolate.
