Rich, creamy, silky-smooth. Warm, rich oak and sherry sweetness, full mouth feel, raisins and soft fruits. Spicy with medium length and a dry finish.

Dubliner cheese is a hard, cow milk cheese that is aged anywhere from 12 months to 2 years. The cheese aims to combine the sharpness of a cheddar with the butter sweetness of Parmigiano. This lends a sweet and floral characteristic similar to that of the Oloroso sherry cask and a sharpness from the Pedro Ximenez casks.
