Don’t think heat, think bright salsa fresca. Our goal in making St. George Green Chile Vodka was to create a versatile spirit that would bring lush vegetality to cocktails both savory and sweet. A variety of California peppers, cilantro, and lime come together to deliver a verdant experience, with just the right kick at the end.
The Spirit
While it leads with a nose of fresh green chiles, this surprisingly nuanced vodka explodes with fresh sweet bell pepper on the tongue before finishing with tangy, vegetal notes that make it transformative in cocktails and sublime sipped over ice.
What’s in it?
While we love spicy foods, we didn’t want to make a pepper vodka that was all about setting your mouth on fire. Peppers are a fruit, after all, and we wanted to capture all the juicy qualities of that fruit in addition to the spice. We use five California-grown varieties in our Green Chile Vodka (jalapeños, serranos, habañeros, red and yellow bell peppers) that build layers of sweet, savory heat. Lime peel and fresh cilantro add even more vibrancy and depth of flavor.
The Process
Green Chile Vodka days at the distillery are intense! Imagine 1,500 liters of non-GMO, high-proof alcohol packed with crushed jalapeños and lime peel. We distill that mixture, sending the vapor through a basket that holds the cilantro—the perfect way to capture the delicate nuances of this fragrant herb. We then infuse the serranos, habañeros, and sweet peppers separately so we can adjust the blend to account for seasonal differences. To finish, we filter to remove visible impurities before bottling—the light green tint that remains is the result of the pepper infusion we perform just prior to filtration.

The sweet/savory heat makes it ideal for the perfect Bloody Mary, a Moscow Mule with extra kick, a zesty Gimlet, or whenever you're craving something fresh and spicy in your glass.
