When master distiller Lance Winters met the woman who would become his bride, she asked why he didn’t make her favorite spirit. His response was to create St. George Botanivore Gin. This bright, elegant, and balanced spirit has been winning the hearts of gin drinkers (and people who didn’t yet know they were gin drinkers) ever since.
The Spirit
Botanivore, our “botanical eater,” is a symphony of flavor comprised of 19 different botanical ingredients working in concert. Think of a meadow in bloom: herbaceous, fresh, and elegant.
What’s in it?
While a classic London dry gin is juniper forward, Botanivore explores how lush gin can be when juniper berries are surrounded by a whole host of botanicals that play off of its piney, earthy, tangy, and spicy notes. So what are these other 18 complementary voices? Count with us: angelica root, fresh California bay, bergamot peel, black peppercorn, caraway, cardamom, fresh cilantro, cinnamon, citra hops, coriander, dill seed, fennel seed, ginger, lemon peel, lime peel, orris root, Seville orange peel, star anise.
The Process
We use two processes to get the best from our many botanicals in Botanivore. Juniper berries, fresh California bay, and fresh cilantro get layered in our botanicals basket. The other 16 ingredients are steeped overnight in the pot of our 1,500-liter copper pot still. The next morning, we apply gentle steam heat to coax out all of the beautiful flavors and aromas.
It should come as no surprise that Lance art directed this label himself, with the bear trap a not-so-subtle hint as to his intentions with this seductive spirit. The illustration is by California artist Steven Noble.
The Experience
This elegant, perfectly balanced, and deeply layered gin is all you need for a damn fine Martini.
We’re also pretty convinced it makes the best Gin & Tonic ever.
In fact, Botanivore is the friendliest gin we’ve ever encountered. Fresh and lightly herbaceous, with bright citrus, subtle floral notes, earth, and spice, it plays well in cocktails of any stripe—so get creative and introduce it to the rest of your liquor cabinet. You can’t go wrong.
