If you're ever in Dallas, you need to take a drive about an hour Northwest to the developing small town of Bridgeport. As you cruise down Main Street, you'll want to find yourself at Oak & Eden and have an incredible experience in whiskey finishing at their Library. Having established several patents, Oak & Eden is challenging typical whiskey-making conventions by sourcing traditionally younger top-notch barrels (3–4 years) for their exclusive finishing processes. With their patented Spire and in-bottle finishing, they can transform the starting bourbon while giving partners like ReserveBar (and even those lucky enough to visit) the opportunity to develop a custom tasting experience.
For our Spire Select release, having tried various whiskey types, wood (and toast) combinations, and even infusions, we finally found the perfect combination to offer you a chance to experience all that Oak & Eden does. The 3.5-year-old high-rye bourbon with a medium toasted French oak Spire soaked in a Port Infusion results in something special. The nose is rich with pastry and jam balanced with maple syrup, toasted grains, and oak. The flavors you'll experience from the first sip include cherry syrup, cola, dark chocolate, roasted nuts, and dark fruits. This ends with a finish full of mint, dark chocolate, marshmallow, oak tannins, and leather. It's perfectly balanced with the right sweetness to stand up as an easy sipper and still complex enough to stand up on a rock.
Oak & Eden's approach to whiskey finishing is clever. Once you experience it, you can't deny the impact of in-bottle finishing.
