Cigalus, a place created from the passion and the intuition of Gérard Bertrand,  is the root of our story and our move towards biodynamic agriculture. With the purchase of Domaine de Cigalus in 1995, Gérard Bertrand finally found the terroir he had been searching for. A terroir where noble grape varieties, both red and white, can express themselves in an exceptional and original way while still preserving a Mediterranean authenticity, the very identity of Languedoc wines.

Domaine de Cigalus is the result of a desire to create a viticultural world apart. The Mediterranean influence of the area is reflected in the estate’s name. The vines totally surrounding the property only add to the magic and unique aspect of this estate. It was here that Gérard Bertrand decided to adopt biodynamic methods, and In 2010 the estate was awarded the Demeter label for certification of biodynamic agriculture.

Origins

From the planting, this vineyard was designed for the development of a top of-the-range wine. Great care and attention are lavished on the vineyard in order to achieve a healthy harvest. The harvesting date varies by grape variety, and is determined after the grapes have been rigorously tasted and have reached their optimum ripeness. The hand-picked grapes are pneumatically pressed as soon as they get to the winery.

After light static settling, 70% of the the juice undergoes an alcoholic fermentation in new barrels, while the rest is vinified in stainless steel vats. A malolactic fermentation is then performed with a temperature control to conserve all the freshness and integrity of the aromas. The maturing in barrels lasts 7 to 8 months – until the spring equinox – with regular stirring. After a light fining, the wine is bottled.
